i love pancake so much that i used to show off my cooking and photography experiment a few years ago about pancake. probably since i was overseas, i got affected with the breakfast they serve although uk is not the pancake heaven, if not mistaken :) once we got back, why bother with pancakes when you can get the best of malaysian here. hello nasi lemak, selamat pagi roti canai. oh pewitt soto, slurppp slurpp teh ais
anyway, once in a while i still wanted to have out of breakfast ordinary. not so long ago i've tasted one of the best serves of french toast at plan b. i even ordered it during lunch time once just because i couldn't find something appealing on the menu (that's only me i guess). i got frustrated when i knew they serve it until 6pm daily.
but what's up with french toast all of a sudden. aaqilah used to request for sticky bun french toast after watching it on tv. since i love french toast hence why not as it's quite easy to make. during my first attempt i only served with icing sugar.
getting better at becoming french toast master is the goal for now hehehehe
that caramelised banana, i made them myself. there's maple syrup and vanilla ice cream, next time i'll make sure we gonna have whip cream instead of ice cream. kids only attracted to ice cream, aiseh..
never thought that baking macarons can be very technical.
last year i went to a macarons class and was so overwhelming once i tasted the scrumptious and pretty looking macarons after the class finished. up until that time, the only macarons that i usually bought was from whisk empire as i rarely buy online. even aaqilah and natalia love macarons from whisk. i once bought from a kiosk in klcc and sadly, they're quite disappointing. i've tried once from a kiosk in metrojaya mid valley, and they're also not really satisfying although looked promising. so i thought, why it's such a big hit?
since i'm not a patissier and have not much experience with macarons, my opinions are solely based on my personal taste and what i think is good. to me, a perfect macarons should have this crispiness on a thin layer of skin but won't easily break when you have a bite. the softness inside the shell holds the sandwiched macarons but it's not soggy. surprisingly, a chocolate lover like myself prefers salted caramel filling macarons over chocolate ganache, but i think chocolate praline filling is one of the best i've ever tasted.
my first attempt with macarons was like a week or two after the class. based on my performance in the class, i was confident that it could work. nah, i was wrong and demotivated just after 1/3 of the process. my meringue wasn't consistent as it should have been, and as i suspected, most of them were flat and took so long to cook. i guessed i was clueless at how long it takes time to cook perfectly and the experiment was quite a disaster. but what i've started must be completed not matter what was the end result, hence sandwiched the shells with ganache fillings, and put them neatly in container. my spirit was lifted a bit as my sister told me it tasted quite good contrary to the looks.
so i had another go last 2 weeks. i prepared the raspberry jam filling the night before and went quite smooth. i thought ok, this is a good indication. the process went smoother, the meringue was quite a success with the extra help from sister, the part-time baker. even when i piped the macarons, they all looked good and i was quite confident that finally i've started to conquer my fear over previous attempt.
wait until they're in the oven when i've started seeing something went wrong. macarons are not like cakes so basically they're not supposed to rise during baking, that's what i thought to myself. pray hard, i really hoped that at least i could get enough for cake decoration.
oh my god, look at these. couldn't say that they're a failure but it's more to something that wasn't work out as expected. however, they're tasted as good as the cute ones, see the following ;)
what went wrong during the first round was basically due to my less experience with macarons. although i did performed well during the class, never forget that it was conducted by a very experienced chef and we were taught in the heart of a fine dining restaurant. the atmosphere, equipment, everything was in a right place.
hence, i had better prepared myself as i knew what should and should not do. i managed better in a more timely manner, and technical aspects were improved too. so why did most of macarons become fluffy was quizzical to me, but i think every techniques applied must be precise. i'll let you know once i have become better next time.
so, back to the test kitchen to achieve perfection!
Following my previous entry, the next day was another class which was a donut class. the chef is someone whom aja is quite familiar with, part of the chef bakery's team at bangi.
learning donuts is quite fun, but you gotta be ready for the long period of making the donut. fermentation proses itself took at least 2 hours, after that further kneading and flattening the dough. we learned more than 5 types of donuts that are possible as the end products. personally i like sardine donut more than i could expected ;)

all of a sudden my recent weekend has become quite hectic after a long dormant periods. a last minute substitution wasn't that bad. now i know how it's possible to design your polka dot apam the way you like, just be creative. to think out of the box and you may get unexpected results. ladybug is achievable and very cutesy, seriously.

nak mencari makan sedap kat ipoh takdelah sesenang yang disangka. aku pernah dengar pasal nasi ganja, pon cerita dari kawan-kawan o.h gak. aku ingatkan apalah kan, rupa ada macam nasi kandar, tapi dengarnya pembuatan special. sedap oo, portion is just right, kenyang sampai ke malam.

A belated entry from aaqilah's birthday last.. month hahah!!
Aku tidur pukul 4 pagi, and it's totally worth the next morning's doziness and dizziness. Baked nearly 140s red velvet cupcakes which I topped with vanilla buttercream. Maklumlah budak-budak tak semua sukakan cheese cream, and mentioning about cheese cream I think I could come up with a good entry of cupcakes frosting ;)
So, from the bottom of maa's heart, I wished you dear happy birthday (this is past hasniza ok), loves u much, dan doa yang terbaik dan terindah untuk aaqilah.. amin =)
Sebelah petangnya lepas balik sekolah, other half belikan aaqilah kek aiskrim. mujur strawberi tadelah aku bitter sangat. aku tade time tu, tak sempat nak kejar ke shah alam. oh i was stucked in a meeting..

Oklah, entri ni macam iklan pulak.
rasa macam lama je entri takde gambar. apalagi aku takde kamera, sedih pulak rasanya. seriously, gambar yang datang dari aku mostly from iphone atau nikon compact kamera belongs to adik aku. sob sob.. kiterang memang macam takde semangat. nevertheless, passion aku terhadap foodtography or sebenanya food photography tetap ada. especially bila browse blogs dengan gambar yang super canteks, rasa bersemangat gitu.. terus rasa nak pergi beli hahaha (tapi duit tade)

sekejap je kan. next week natalia turns 1. hey dah berjalan anak dara bulat sorang ni. mata bulat. muka bulat. jalan pun bulat-bulat. aaqilah sekarang ni tahap manja pon boleh tahan, kadang-kadang aku pon agak kagum dengan tahap kesabaran aku ni. maa awesome!
pencarian kerja pon rasanya makin malas. malas dah nak pergi interview dengan tahap aku yang macam setan. down tau, Allah je yang tau. o.h cakap, bby maybe that's what universe is telling you, to stop. dah le tuu.. ok. tapi aku mohon Tuhan kasi satu ketetapan yang firm untuk aku buat sesuatu. sesungguhnya aku on the crossroads. a few paths to choose, tapi semua tanda jalan sangat blur. aku tak nampak satu pon. errr boleh difahami ke metaphore aku ni ehehe
next week juga bermula puasa. memang dah lamalah aku tak merasa ramadhan, tahun lepas dengan natalia's arrival a week before puasa menyaksikan aku terlepas. kesian kat o.h, dia kata tak macam puasa pon. hari-hari kena makan lauk orang pantang. black pepper salmon. black pepper ayam. nasi kosong. buns buns and buns. maka tahun ni aku kenalah mengganti puasa kan. setelah aku berjaya mengganti 10 hari di awal tahun, memang liat nak buat sikit-sikit ni. dengan natalia yang still breastfeeding, aku rasa macam tak larat je. eheh alasan je tu. bila july datang, datang jugak menggelabah aku. aku pon mengganti dengan giatnya, tapi perempuan matter last week buat aku di tahan hidung sekarang. campur hari ni, ada balance 2 hari. tapi temptations macam-macam ni buat aku pening sikit.
temptation pertama. hari ni aku nak balik terengganu. oh ya last sekali aku menjejak kaki was in 2007, sebelum kamera aku kena curi. hari tu dah terbayang dah my list of must makan place. dari siang sampai ke malam ni. bihun sup perut kat pasar payang. keropok lekor. lepak-lepak batu buruk sambil makan ais krim goreng ke. air buah besar kat seberang takir kalau sempat. seafood at kelulut. oklah, ni sekadar contoh. lagipon makteh pakteh aku tau banyak hidden eaterie yang perlu dicari sendiri. argh drooling aku dibuatnya.
temptation kedua. boleh ke aku tahan tengok derang ni makan sedap otw balik kl hari ahad nanti. insyaAllah =(
temptation ketiga. aku nak pergi lunch at upm area, boleh tak hahaha.. hari isnin, ingat nak ganti puasa. hari selasa pulak mak aku kena pergi daycare, cek darah. jadi takde sesapa kat rumah kut, hence tade sesapa nak mintak tolong tengokkan aaqilah and natalia. haisshh..

a simple birthday dinner to cater 3 and half people. natalia takdelah makan sangat, mana boleh belasah semua. aaqilah berjaya menghabiskan (or nearly habis) nasi, ayam dan cupcakenya sebab nak buka present punya pasal. berjaya menahan dia bukak since sunday night. macam-macam alasan bagi dah huhu
walaupun simple, tapi pagi ni aku bangun dengan sakit-sakit badan. apesal la flat semacam?. ini belum nak buat party lagi ni, kalau camni camne nak masak besa punya? order katering laa jawabnya hahaha

ok, as i promised in my previous entri. my experience with chocolate ganache. aku pernah try tapi tak pernah piping due to it's consistency. kali ni aku cuba resepi lain, dan sejukkan dulu. messy, buttercream lagi senang rasanya. however, walaupun texturenya yang kurang menyakinkan bila piping, it stays accordingly. dan sedap! kurang muak as compared to buttercream.
practice makes perfect. next time saya cuba lagi. selamat maju jaya!!

opportuniti ke perlis (cousin's wedding), jadi kiterang mengambil kesempatan singgah kat penang sat. on the way balik ada pit stop makan kat juru, warung pak su mee ketam. being told by lotsa people that this is a must, yeah this eatery is very strongly recommended. price wise, aku rasa not bad. ada 5 adult, dan 1 kid.3 nasi goreng ketam, 1 mee ketam, 1 kuetiaw ketam. tambah lagi 3 keping ikan pari bakar, takut laa man-man je kan. tapi tekejut melihatkan himpunan ketam yang maha dasyat.limpahan dan pesta!!

so far aku dah try kat 3 kedai, yang kat atas ni aku minum kat restoran hajris bistro, or more popular as rhb (menurut kawan aku) yang terletak di bandar tasik permaisuri. orang cheras, i envy u sebab ada 2 tempat best, satu lagi original kayu nasi kandar yang menurut another good friend of mine nasi kandaqnya memang masyuk. okeh, next time aku try la nasi kandar pulak.
